Flinders – 2 Gold Medals, 2 Silver Medals
Belvedere – 1 Gold Medal, 2 Silver Medals
Haloumi – 1 Gold Medal, 2 Silver Medals
Havarti – 1 Gold Medal, 2 Silver Medals.

Wayne started in a cheddar cheese factory in 1978 and has been involved in every aspect of cheese manufacture since then. In 2013 Wayne started making his own cheese in Murray Bridge, South Australia.

“Making my own cheese started out as a hobby after attending a five day cheese making workshop at Regency TAFE in 2007. Over the next 6 years I made a number of batches of cheese at home including some very nice cheese and some absolute failures. Following a great deal of encouragement from my wife Sue, family and friends I started building a cheese making facility in mid-2012 and made my first registered batch of cheese on April 1st 2013.”

Wayne also runs his own consulting business and teaches cheesemaking all over Australia. Visit foodprocessingoptimisation.com.au
