Wayne Austin is a dairy technologist and cheese maker with over 30 years of experience who not only makes his own cheese but teaches cheesemaking to small and large manufacturers all over Australia.
Wayne Austin has a Diploma of Dairy technology (Gilbert Chandler) and MBA (Process Technology from Latrobe University.
Wayne started his career with United Milk Tasmania at the Wynyard cheese plant. He worked there as a cheesemaker, cheese factory supervisor and Quality Manager until 2000.
He then moved to Total Quality Milk as Factory Manager commissioning an evaporator, cream processing line AMF line. He later moved to Dairy Farmers, commissioning and managing their whey powder plant in Jervois SA before moving into a role with the Cheese Research and Development team.
In that team he undertook projects at 4 different cheese plants working with Mozzarella, Swiss, Parmesan, Romano and Cheddar cheese. He was also project leader for major cost reduction and yield improvement initiatives.
Since 2009 Wayne has ran a consulting business training and giving advice to many dairy companies throughout Australia.
From 2013 until 2017 Wayne had his own artisan cheese facility at Murray Bridge making a range of high quality cheeses.
In 2015 Cheese Please was awarded Champion Cheese at the Royal Adelaide/DIAA Show.
Wayne is an experienced show judge and is Assistant Head Judge for the National/Victorian DIAA Product Awards.
